hometown food on top chef masters

just watched the latest top chef masters an hours ago and to my horror and surprise, one of the "top chefs" made kaya toast dipped in a sunny side up egg with a dark soy "glaze". susan feniger drew Aphrodite as her challenge inspiration and decided that eggs and it's symbol for fertility is the way to go. now, i don't fault her for thinking that kaya is pretty darn awesome (as i too think it is pretty darn awesome and would attempt to make it from scratch if i'm away from it long enough) but to make the whole thing without any changes?! is it ok to just take the whole idea and make it exactly the same? i mean i would expect more finesse for a renowned chef considering that the same presentation she made sells for less than US$2 per pop back at the most famous coffee shop we have. while i haven't tasted hers, i can't imagine it being better than the one my family has faithfully devoured over and over again in the last few decades. well, there is a slight change, she did a fried egg as opposed to our poached egg.

the most hilarious bit was when gail simmons said she loved the dark soy "glaze" (read: a few drips on the egg) and would from now on eat eggs this way. has no chinese chef served her a fried egg with dark soy and white pepper on it ever before feniger?
